Glenfarclas has a series of dunnage warehouse
on site some dating back to the 1880's, and matures all of its single
malt on-site. Dunnage warehouses are the original way of maturing whisky:
earthen floors, thick natural stone walls, damp and casks stacked a maximum
of three high. Modern racked warehouses use metal racks and can be stacked
much higher. As you can see in the VR Glenfarclas makes plenty use of
500 liter ex-sherry butts, as well as the smaller 250 liter former bourbon
hogsheads.
